Important: Keep frozen until ready to use, thaw in refrigerator overnight, do not refreeze

 

Contents:

-5, 6oz. Swordfish Steaks                   ---   28% Protein 

-5, 6oz. Tuna Steaks                            ---   25% Protein

-5, 6-8oz. Orange Roughy Fillets            ---   27% Protein 

 

Cooking recommendations: Swordfish and Tuna Steaks are best grilled or pan-seared. Orange Roughy is better in the oven, or on the grill.

Swordfish Steaks:

-1/2 cup olive oil
-
3 tablespoons chopped fresh mint leaves
-
3 tablespoons fresh lemon juice
-
1 tablespoon chopped fresh basil leaves
-
1 garlic clove, minced
-
Salt and freshly ground black pepper
-
4 Swordfish Steaks
Directions:
1. Prepare the grill (medium-high heat). 

2. Whisk the oil, mint, lemon juice, basil, and garlic in a medium bowl to blend. Season the lemon and olive oil mixture with salt and pepper, to taste.
3. Brush the Swordfish Steaks with 2 tablespoons of the lemon and olive oil mixture. 

4. Grill the steaks until just cooked through, about 3 minutes per side (depending on thickness of steaks).
5. Spoon the remaining sauce over and serve.

Tuna Steaks:

-1/4 cup olive oil
-
4 teaspoons Old Bay Seasoning
-
2 teaspoons lime juice
-
2 teaspoons lemon juice
-2 8oz. Tuna Steaks

Directions:

1. Combine Olive Oil, Old Bay, Lime and Lemon Juice.
2. Mix Well.
3. Pour over Tuna Steaks and marinade 20 minutes, turning occasionally.
4. Make sure grill is hot – place steaks in hottest section and Sear steaks 1 to 2 minutes per side to seal in the juices.
5. Finish cooking just slightly away from the hottest area – 8 to 10 minutes per inch of thickness.
6. Garnish with lemon (optional)
Orange Roughy:

-4 Orange Roughy fillets

-1 teaspoon seasoning salt 

-pepper

-paprika

-3 tablespoons butter or 3 tablespoons margerine, melted

Directions:

1. Put the Orange Roughy fillets in a greased 11x7 inch baking dish.

2. Sprinkle with seasoned salt, pepper, and paprika.

3. Drizzle with melted butter.

4. Cover and bake at 400 degrees for 15 to 20 minutes or until fish flakes easily.
