Contents:

-2 pounds of King Crab Legs size:16-20/lb.

-4, 8oz. Tuna Steaks

-4, 6oz. Swordfish Steaks

 

Cooking recommendations: Crab legs are best steamed or boiled. Steaks are best cooked on the grill or seared in the frying pan.

King Crab Legs: Generally, for an appetizer 1 or 2 legs is plenty per person; in a main course expect around 2-4 legs per person.

Steamed—Fill a large pot about 1/3 full with water. Bring it to a boil. Put the crab legs in a colander over the boiling water. Put a lid on the pot to keep the steam in. This will take about 10 minutes.

Boiled—Bring a large pot of water to boil. Turn the heat down to bring the water to a slow boil. Drop in your crab legs. Boil for 5-7 minutes. Remove from the water, drain, and serve.

Tuna Steaks:

-2 tablespoons lemon juice

-1 tablespoon olive oil

-2 garlic cloves, minced

-2 teaspoons minced fresh thyme or 1/2 teaspoon dried thyme

-4 tuna steaks

-1/4 teaspoon salt

-1/4 teaspoon pepper

Directions:

1. In a large resealable plastic bag, combine the lemon juice, oil, garlic and thyme. Add the tuna; seal bag and turn to coat. Refrigerate for up to 30 minutes, turning occasionally.

2. Remove tuna from bag; sprinkle with salt and pepper. Drain and discard marinade. Moisten a paper towel with cooking oil; using long-handled tongs, lightly coat the grill rack.

3. Grill tuna, covered, over medium-hot heat or broil 4 in. from the heat for 3-4 minutes on each side for medium-rare or until slightly pink in the center. Yield: 4 servings.

Swordfish Steaks:

-4 gloves garlic

-1/3 cup white wine

-1/4 cup lemon juice

-2 tablespoons soy sauce

-2 tablespoons olive oil

-1 tablespoon  poultry seasoning

-1/4 teaspoon salt

-1/8 teaspoon pepper 

-4 swordfish steaks

-1 tablespoon chopped fresh parsley (optional)

-4 slices lemon, for garnish (optional)

Directions

1. In a glass baking dish, combine the garlic, white wine, lemon juice, soy sauce, olive oil, poultry seasoning, salt and pepper. Mix to blend. Place Swordfish steaks into the marinade, and refrigerate for 1 hour, turning frequently.

2. Preheat an outdoor grill for high heat, and lightly oil the grate.

3. Grill Swordfish steaks for 5-6 minutes on each side. Garnish with parsley and lemon wedges.
