Catfish

We are a USDA inspected facility that processes wild Catfish. The majority of the catch is a Brown Bullhead that lives in the lakes and rivers around Polk County. It is predominantly a by-catch when our fisherman are going after Tilapia; but with everyone bringing in small amounts, it adds up quickly. The summer is the best time for us to target Catfish and bring in higher numbers than usual.

Whole Round Catfish

The majority of the catch is a one to two pound fish. We try to fillet every fish that is big enough to make a 3 oz. fillet or bigger. The majority of the fish is dressed and made into a frozen product with our IQF tunnel.

Hassar

We also get an abundance of Hassar certain times of the year. We are able to freeze and store large amounts of this product with our IQF Tunnel. No one can compete with our quality of frozen Hassar. It is literally frozen in minutes and it gets a water glaze to protect the fish from dehydrating in the freezer.
